If you love banana bread and you consider yourself a chocoholic, this recipe is for you. These baked goods incorporate all the flavors you love in the easy and portable form of a muffin. Of course, the best banana muffins and banana bread are made with very ripe bananas. Sometimes you can get lucky and there will be a bin in the grocery store with a bunch of single, overripe bananas that haven’t sold yet. These are a goldmine for bakers. The longer the bananas are allowed to ripen, the more the sugars develop in the fruit. This lends itself to a moister and sweeter muffin.

Ingredients

  • 4 tablespoons unsalted butter

  • 6 tablespoons unsweetened cocoa powder

  • 4 tablespoons hot water

  • 1 1/4 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 1 tablespoon baking powder

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon salt

  • 2/3 cup milk

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 3/4 cup mashed ripe bananas, about 2 medium bananas

  • 1/2 cup semisweet chocolate chips

  • 1 cup unsifted confectioners' sugar
