Pancakes are kids' favorite weekend breakfast, and Bisquick pancakes have always been fast and easy. Everyone loves a fluffy pancake, right? Have you ever wondered how to make them even fluffier? The secret ingredient may be in your pantry: seltzer water.

If a can of soda can serve as a great trick with making a cake from a cake mix, seltzer can definitely be used to boost up pancake batter. The bubbles make your pancakes extra airy and light and perfect for soaking up that maple syrup.

Bisquick is a pre-mixed baking mix consisting of flour, shortening, salt, and baking powder (a leavening agent). Add milk, egg, and butter to the dry mix, and voila! You have pancake batter that is ready to transform into a warm, comforting breakfast.

  • 1 large egg

  • 1 cup milk

  • 1/4 cup seltzer water

  • 2 cups baking mix, such as Bisquick

  • 1 teaspoon butter, optional

  2. Heat an electric skillet to 325 F. Or place a skillet over medium to medium-high heat.

  3. In a large bowl, whisk together the eggs, milk, and seltzer water.

  4. Stir in the baking mix just until mixed and the large lumps have disappeared, but small lumps remain. Be careful not to over-mix.​

  5. Let the batter rest for 5 to 10 minutes.​

  6. Melt the optional butter on griddle or skillet, if using.​ (You can also use nonstick cooking spray.)

  7. Ladle 1/4 cup of pancake batter onto the griddle.​

  8. Cook until tiny bubbles appear on the surface of the pancakes and the bottom starts to brown. If the bottom starts to brown before the pancakes are cooked, turn the heat down.

  9. Flip with a spatula and cook until the other side turns golden brown.

Tip

  • Make a double batch of these pancakes and keep them in the fridge so you have easy breakfasts during the busy work week.
  • Use a larger griddle and make several pancakes at once, speeding up the cooking process.
  • Substitute nondairy milk if need be.
  • Bisquick mix is different from regular pancake mix because it's typically not as sweet.

Variations

There are so many ways to jazz up pancakes. Here are some of our favorites.

  • Add 1 teaspoon vanilla extract.
    Sprinkle the pancakes with cinnamon sugar or confectioners' sugar.
  • Add lemon juice or lemon zest (or orange zest).
  • Add 1/2 cup to 1 cup frozen or fresh blueberries.
  • Add 1/2 cup to 1 cup mini chocolate chips to the batter.
  • Top with 1/2 cup to 1 cup chopped walnuts or pecans.
  • Serve with jam, applesauce, or yogurt.

How to Store and Freeze Bisquick Pancakes

  • These pancakes will keep well wrapped in the refrigerator for 3 to 4 days. Reheat them in a toaster or a low oven (about 325 F) for a few minutes until completely hot. It's helpful to cover them loosely in foil so they don't get too dried out.
  • Wrap pancakes individually for freezing in foil or plastic wrap and transfer to a zip-close freezer bag up to 2 months. Reheat from frozen in a toaster, a toaster oven, or conventional oven for several minutes until completely hot.
