Bisquick is a pre-mixed baking mix consisting of flour, shortening, salt, and baking powder (a leavening agent). Add milk, egg, and butter to the dry mix, and voila! You have pancake batter that is ready to transform into a warm, comforting breakfast.

Steps to Make It

Gather the ingredients.

Heat an electric skillet to 325 F. Or place a skillet over medium to medium-high heat.

In a large bowl, whisk together the eggs, milk, and seltzer water.

Stir in the baking mix just until mixed and the large lumps have disappeared, but small lumps remain. Be careful not to over-mix.

Let the batter rest for 5 to 10 minutes.

Melt the optional butter on griddle or skillet, if using. (You can also use nonstick cooking spray.)

Ladle 1/4 cup of pancake batter onto the griddle.

Cook until tiny bubbles appear on the surface of the pancakes and the bottom starts to brown. If the bottom starts to brown before the pancakes are cooked, turn the heat down.

Variations
There are so many ways to jazz up pancakes. Here are some of our favorites.

- Add 1/2 cup to 1 cup frozen or fresh blueberries.
- Add 1/2 cup to 1 cup mini chocolate chips to the batter.
- Top with 1/2 cup to 1 cup chopped walnuts or pecans.
- Serve with jam, applesauce, or yogurt.
How to Store and Freeze Bisquick Pancakes
- These pancakes will keep well wrapped in the refrigerator for 3 to 4 days. Reheat them in a toaster or a low oven (about 325 F) for a few minutes until completely hot. It's helpful to cover them loosely in foil so they don't get too dried out.
