1 tablespoon extra-virgin olive oil

1/2 cup chopped onion

2 cloves garlic, finely minced

1 (28-ounce) can crushed tomatoes

1 teaspoon dried oregano, crumbled, or about 1 tablespoon chopped fresh oregano

1/2 teaspoon dried basil, or 1 1/2 teaspoons chopped fresh basil

Salt, to taste

Freshly ground black pepper, to taste

2 cups shredded mozzarella cheese, divided
Steps to Make It

Gather the ingredients.

Preheat the oven to 350 F / 180 C / Gas 4.

Butter a 2 1/2- to 3-quart shallow baking dish or casserole.

Cook the penne pasta in boiling salted water as directed on package; drain well and set aside.

Meanwhile, heat the olive oil in a medium saucepan over medium heat. Add the onion to the pan and cook for about 4 minutes, or until it is translucent. Add the garlic to the onion and continue cooking for 1 minute.

Add the tomatoes, basil, and oregano to the onion and garlic. Cook until heated through, stirring frequently.

In a large bowl, combine the cooked, drained penne, the tomato sauce mixture, and 1 cup of the shredded mozzarella cheese.

- For a chunkier sauce, replace half of the crushed tomatoes with a 14.5-ounce can of Italian seasoned diced tomatoes.
