General Tso's chicken is undoubtably one of the most popular Chinese takeout dishes here in America. Although you can switch up the protein and use tofu or pork, it's typically made with crispy chunks of fried chicken which is then tossed in a sweet and spicy Asian sauce and is served over white or fried rice.
When this method is applied to large pounded chicken breasts, the results are basically begging to be put to use in a sandwich. This recipe, which uses large fried chicken breasts doused in homemade General Tso sauce, is topped with crunchy Asian slaw and creamy Kewpie mayonnaise; regular mayonnaise will also work.
And although the homemade sauce is better, feel free to save yourself some time and buy the prepackaged bottled variety at your local grocery store. And if you don't eat chicken, feel free to replace it with fried tofu or a crispy pork cutlet.
Ingredients
For The Fried Chicken:

1 chicken breast

1 large egg

2 cups all-purpose flour

1 tablespoon cornstarch

1 teaspoon salt

3 cups peanut oil
For The General Tso Sauce:

1/4 cup chicken stock
-
2 tablespoons sugar
-
2 tablespoons rice wine vinegar

1 tablespoon hoisin sauce
-
1 tablespoon sesame oil
-
1 tablespoon Sriracha
-
1 tablespoon dark soy sauce
-
1 teaspoon cornstarch
-
1 tablespoon oil
-
1 medium (4-1/8" long) scallion, chopped

1 tablespoon ginger, diced
-
1 clove garlic, minced
-
1 ounce toasted sesame seeds
For The Asian Slaw:

1/3 cup shredded red cabbage
-
2 tablespoons shredded carrot
-
1 tablespoon mint, chopped
-
1 tablespoon cilantro, chopped

1 tablespoon Thai basil, chopped

1 1/2 teaspoons sugar
-
1 teaspoon ground ginger
-
1 tablespoon mayonnaise

1 tablespoon rice wine vinegar

1 teaspoon sesame oil
For the Whole Sandwich:

1 brioche bun
-
2 pieces fried chicken breast
-
1/4 cup Asian slaw
-
1 tablespoon mayonnaise
Steps to Make It
--FOR THE FRIED CHICKEN--

Heat oil to 375 F.

Beat egg in a bowl. Mix flour, cornstarch, and salt in a bowl.

Dunk chicken in egg mixture, then flour mixture, then add to hot oil and fry until golden brown and chicken cooked through. Set aside on a paper towel.
--FOR THE GENERAL TSO SAUCE--

Whisk together chicken stock, sugar, rice wine vinegar, hoisin, sesame oil, Sriracha, dark soy sauce and cornstarch in a medium sized bowl. Set aside.

Add oil to a pan and add scallion, ginger, and garlic and cook for 1-2 minutes or until fragrant. Add mixture from step one and bring to a boil.

Let the sauce cook for a few minutes until thickened. Add fried chicken and toss to coat. Sprinkle with toasted sesame seeds and set aside.
--FOR THE ASIAN SLAW--

Mix all ingredients in a large bowl and set aside.
--FOR THE SANDWICH--

Toast buns and place the General Tso fried chicken on top of the bottom bun. Next, add Asian slaw, a drizzle of mayo and the top bun. Serve immediately.
