We purchased the OXO Good Grips Jelly Roll Pan so our reviewer could put it to the test in her kitchen. Keep reading for our full product review.

As someone who has previously worked in a professional kitchen and doesn’t particularly like change, I looked at the micro-patterns on the OXO Good Grips Non-Stick Pro Half Sheet Jelly Roll Pan with skepticism. The grid-like pattern and nonstick coating seemed like extra “frills,” and I wondered if it would really make a difference. However, I’m happily surprised to report that it did. I didn’t realize that my old sheet pans needed “revolutionizing” until now.

Design: Micro-textured pattern

These Good Grips sheet pans were designed with commercial use and efficacy in mind. The first thing you’ll notice is the sheet's bronzed color and textured surface. The OXO Good Grips Non-Stick baking sheets have a two-layer, commercial-grade, nonstick coating to help baked goods and other foods release easily. These also have a micro-textured pattern to help minimize surface contact and promote airflow for even cooking and baking. The textured pattern didn’t leave imprints in most foods, but it did show up faintly on softer baked goods, like cookies. Since I usually transfer my baked goods to a cooling rack afterward, these tiny grid marks didn’t bother me.

Relative to the other baking sheets I tested, these are significantly heavier. As a result, I found it more difficult to transfer them to and from the oven with just one hand. Two hands are definitely needed when transporting the baking sheet. Generally speaking, this wouldn’t bother me but for busier days in the kitchen when I am working with batters and doughs, being able to hold a baking sheet with just one hand is critical.

Material: Heavy-duty

Constructed from heavy-gauge aluminized steel, you’ll immediately notice the weight of these sheet trays. At 2.3 pounds, they are about half-pound heavier than some of the other ones I tested. Because of this, they’ll be harder to transfer to and from the oven with just one hand.

Their ceramic-reinforced PTFE nonstick coating works exceptionally well in preventing food from sticking to the surface. It also provides a barrier between the aluminized steel and your food, so you can cook acidic foods on these baking sheets so long as there aren’t any scratches on the sheets. This shouldn’t be a problem, however, since these baking sheets are relatively scratch-proof. 

The OXO baking sheets will make any novice cook feel like a professional. 

Performance: Conducts heat well

To test the performance of the OXO baking sheets, I first roasted a full sheet of vegetables. I’m happy to report that the pan conducts and distributes heat exceptionally well. All of the vegetables caramelized perfectly—and much quicker than the other sheet trays I tested (about 20 percent faster). 

After having a lot of success with the vegetables, I baked cookies directly on the sheet trays to see just how good the nonstick coating is. The cookies lifted right off the trays, but they did have tiny imprints on them from the micro-texture pattern. When baking again with a silicone mat and parchment paper, this was no longer a problem. 

The pan also cools relatively quickly, reaching room temperature in under 10 minutes when at 400 degrees Fahrenheit. So, if you’re someone who does a lot of baking in large quantities, this is a big plus.

Cleaning: Couldn’t be easier

I was expecting these baking sheets to be difficult to clean because of their micro-textured pattern, but I was pleasantly surprised. Because they are nonstick, not nearly as much residue or grease builds up or gets stuck in crevices. The OXO baking sheets were so effortless to clean. I imagine that this may change over time though, as most nonstick tools generally lose some of their efficacy with repeated use. 

One thing that wasn’t clear to me was how to care for the baking sheet. According to the maker’s website, the baking sheets are dishwasher-safe. However, upon receiving the baking sheet, I noticed that the care instructions attached were different and recommended handwashing with soap and water. I personally never put my baking sheets in the dishwasher (they take up too much space), but if you do, you might want to proceed with caution.

Competition: Outperforms others in the market

TeamFar Baking Sheet: Significantly less expensive than the OXO baking sheet, the TeamFar baking sheet may be more affordable but it does not stack up. If you’re looking for lighter-weight pans that can accommodate acidic foods on a smaller budget, the TeamFar is for you.

Nordic Ware Naturals Baker's Half Sheet: The Nordic Ware half sheets are as traditional as it gets. They’re made of heavy-duty aluminum and are classic in design. They won’t perform as well as the OXO baking sheets, but they get the job done.

Price: Expensive but worth it

The OXO baking sheets usually retail for around $25 for one pan. While this is about double the price of some of the other sheet pans we tested, the new, high-performance technology made it well worth it.
