In this fun recipe, juicy burgers are filled with a tomato and pepperoni mixture, then topped with melted cheese. Yum. This is a great way to add interest to plain old burgers, which can get boring after a while. Before getting started, be sure that you know all of the tips and tricks for making the best burgers.
You can use ground chicken or ground turkey in place of the ground beef if you'd like. If you do that, add about 1/2 cup of soft breadcrumbs soaked in 2 tablespoons of milk or water to add some moisture to the meat. Make sure that you cook ground chicken or turkey (in fact, all ground meat) to a minimum temperature of 165 F as checked with a food thermometer.
Use kaiser rolls, or ciabatta rolls, or other sturdy rolls for these burgers. Soft white hamburger buns just won't stand up to the meat and all the cheese and fillings. Enjoy these burgers with a green salad or a fruit salad and some cold iced tea.

2 pounds lean ground beef

1 1/2 teaspoons dried Italian seasoning

1/2 teaspoon kosher salt

1/3 cup pepperoni, chopped

1/3 cup plus 6 tablespoons pizza sauce, divided

3 tablespoons mustard

3 tablespoons grated Parmesan cheese

6 slices mozzarella

Steps to Make It

Gather the ingredients.

Prepare and heat an outdoor gas or charcoal grill for medium heat.

Combine ground beef, Italian seasoning, and salt in a large bowl and mix gently. Form into 12 thin patties and place on waxed paper.

Combine pepperoni, 1/3 cup of the pizza sauce, mustard, and Parmesan cheese in a small bowl. Divide this mixture among 6 patties within 1/2-inch of patty edges.

Top filling with remaining patties and press edges together to seal.

Grill patties 4 to 6 inches from medium coals for 10 to 15 minutes until meat is thoroughly cooked to 165 F, turning carefully just once. Top each burger with a slice of mozzarella cheese and remaining pizza sauce.

Grill buns, cut-side down, and let cheese melt on burgers for 1 to 2 minutes, then serve burgers in buns.
